If fat cause insulin insensitivity/insulin resistance, then should we entirely eliminate fat of all kinds in our diet? High carb diet also increase triglyceride levels which usually go hand in hand with diabetes and cardiac disease. What would happen to our body if we elimimate carb entirely versus fats entirely?

When you talk about fat disrupting insulin pathway, are you talking about fat across the board? Not all fats are created equal.
